Protein Pumpkin & Chai Pancakes

It’s Autumn in Australia, and as the weather cools down what else could be more seasonal than pumpkin and the classic taste of chai? These pancakes are high in protein and so easy to make!

Ingredients

  • 120g pumpkin
  • 80g egg whites (~2 egg whites)
  • 20g oat flour (or blended oats)
  • 20g coconut flour
  • 20g whey protein powder (40-46% off with EMWIZZMYP)*
  • 1/4 tsp baking powder
  • 160g pot plain yopro greek yoghurt
  • 1tbsp sugar-free chai powder (20% off 500g bags with EMWIZZ)*

Method

  1. Remove skin from pumpkin and chop roughly. Boil/steam until soft. Allow too cool.
  2. Combine oat flour, coconut flour, protein powder and baking powder.
  3. Separately, mash pumpkin with a fork and whisk in egg whites. Add in dry ingredients and combine. Add 1-2tbsp water to thin batter if required.
  4. Cook pancakes in a non stick frying pan on medium heat. Each pancake should only take ~30-60 seconds to cook on each side.
  5. Combine 100g yoghurt with the sugar-free chai powder. Stack pancakes, layering with the yoghurt mix at each later. Dollop the remaining 160g on top.
  6. Top with cinnamon/cacao nibs/sugar free maple syrup and ENJOY

Makes 8-10 small or 4-6 large pancakes.
